Sup Ayam Delight

Ingredients

2 pounds chicken, cut into pieces
3 cloves garlic, minced
1 inch ginger, grated
2 stalks lemongrass, bruised
1 onion, sliced
4 cups water
1 cup coconut milk
2 tbsp. vegetable oil
Salt and pepper, to taste

Instructions

Heat oil in a large pot over medium heat. Add garlic, ginger, lemongrass, and onion. Sauté until fragrant.
Add chicken pieces and season with salt and pepper. Cook until chicken is browned on all sides.
Pour in the water and bring to a boil. Reduce the heat and let it simmer for about 30 minutes, until the chicken is cooked through.
Add the coconut milk and let it simmer for another 5 minutes. Season with more salt and pepper if needed.
Remove the lemongrass stalks before serving.
