- 6 kaffir lime leaves

- 1 tbsp. of sugar

- Salt to taste

For the spice paste:

- 8 dried chillies, soaked in hot water and drained

- 5 shallots, peeled

- 3 cloves of garlic, peeled

- 1 thumb-sized piece of ginger, peeled

- 1 thumb-sized piece of galangal, peeled

- 1 tsp. of belacan (shrimp paste)

Instructions:

1. Grind all of the spice paste ingredients in a blender until smooth.

2. Heat a pot over medium heat, add the spice paste and cook until fragrant.

3. Add the lemongrass, kaffir lime leaves, and turmeric leaf. Stir and cook for a minute.

4. Pour in the coconut milk and stir until well combined.

5. Add the tamarind water and bring the mixture to a boil.

6. Add the sugar and salt to taste. Then, reduce the heat to low and let the mixture simmer for about 10 minutes.

7. Add the hard-boiled eggs and let the mixture simmer for another 10 minutes, stirring occasionally, until the eggs are heated through and the curry has thickened to your desired consistency.
