  • 3 fresh chillies, sliced
  • 3 cloves garlic, chopped
  • 1 onion, sliced thinly
  • 2 tomatoes, chopped
  • 2 tbsp tamarind paste, mixed with 1 cup of water
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp turmeric powder
  • 1 stalk lemongrass, bruised
  • 2 kaffir lime leaves
  • 2 tbsp cooking oil

Instructions

  1. Blend the soaked dried chillies and garlic into a paste.
  2. Heat up the cooking oil in a pot and fry the chilli paste until fragrant.
  3. Add in the sliced onion and fresh chillies, and continue frying until the onion is translucent.
  4. Add in the chicken and continue frying until the chicken is cooked through and slightly browned.
  5. Add in the chopped tomatoes, turmeric powder, tamarind water, sugar, salt, lemongrass and kaffir lime leaves.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes until the gravy has thickened.

We highly recommend serving this dish with steamed white rice and some sliced cucumbers on the side to cut through the spiciness and sourness of the dish. Bon appetit!
